The palate has bright raspberry and cherry fruit flavours with subtle savoury oak. Soft tannins provide structure and a long finish.
Vinification
This wine has been produced from Shiraz grapes picked in
early February from the old vines off our Audrey Wilkinson
Vineyard. The grapes were destemmed and cold
soaked for 4 days, and then fermented in 7 tonne fermenters
over 1 week with pumping over twice a day. The wine was
pressed and put to 100% French oak barriques and puncheons
to undergo maturation for 10 months. The wine was then
blended, filtered and bottled.
Cellaring Potential
Enjoy now, or over the next 10+ years.
Vintage Notes
The 2021 vintage is regarded as a classic Hunter Valley
vintage. Excellent December rainfall meant that the vines
were in healthy condition with plenty of foliage. A cooler and
drier than average January delivered ideal ripening
conditions. Good vineyard management resulted in grapes
showing flavours of great freshness and intensity. The
white wines in particular having great intensity of
flavours and will age well.
