A malolactic fermentation was followed by a long maturation on fine lees. A light treatment and filtration were necessary to obtain a clear and stable wine. This wine has not been treated with cold to preserve aromatic finesse. 4100 units were bottled on July 9th 2024, or approximately 22 months after harvest.
Vinification
After a long pressing and static settling of 12-24 hours, fermentation occurred at 20 degrees celsius using natural yeasts.
Vintage Notes
After a rather mild and dry Winter, 2022 begins with Spring frost. Damage remains very limited. An exceptionally warm Spring makes the difference in 2022. The rise in temperatures in May hits the start of vegetation. Mid flower is observed by the end of May, in excellent conditions. Summer is hot and dry (very dry!) and brings us a ripe and perfectly healthy harvest. We harvested our Chablis on September 7th, 2022.
Region Notes
Exposed south-west, this Chablis premier cru from the left bank of the river Le Serein, benefits from a relatively superficial and stony underground. In this environment of sedimentary rocks and shells, the roots find their way to install themselves as close as possible to the bedrock.
