A malolactic fermentation was followed by a long maturation on fine lees. Maturation is achieved both in stainless steel and in demi muit of 600 L. After 12 months these are assembled and continue their maturation process together for 6 more months. A slight collage and filtration were necessary to obtain a wine that is clear and remains stable over time. This wine has not been treated with cold in order to preserve aromatic finesse.
Vinification
After a long pressing and statis settling of 24 hours, fermentaion occured at 20C using natural yeasts.
Vintage Notes
After a rather mild and dry winter, 2022 began with spring frost. Damage was limited. An exceptionally warm spring made the difference in 2022. The rise in temperature in May hits the start of vegetation with Mid-flower observed by the end of May. Summer was hot and dry (vry dry!) and brought us a ripe and perfectly healthy harvest. We harvested our Chablis on 7 September 2022.

The location 'Bas de Fourchaume' cane be found below Premier Cru Fourchaume. It is classed as appellation Chablis. This lower hillside benefits from the same south-southwest exposure as the Premier Cru.
