Tasting Notes

Aroma

Granny smith apple, with lifted citrus and kaffir lime spice.

Maturation

6 months in tank.

Palate

Fresh acidity, mineral, and slatey texture, with great palette weight. 4 grams of residual, providing nice balance to the acid profile.

Vinification

Some foot stomping and then pressed to tank. Indigenous yeast, fermentation stopped at approx. 4 grams residual. Barrel origin: 100% tank.

Vintage Notes

2025 was a warm dry year in the Grampians with its typical hot days and very cold nights. This diurnal variation is excellent for reason, providing flavour development but plenty of natural acid due to the cold nights halting ripening.

Winemakers Comments

Our vineyard was planted on the steep Eastern slopes of the Serra Range in the Grampians in 1969. The vineyard was previously owned by the pioneering winemaker Trevor Mast, and was a key vineyard for Mount Langi Ghiran for many decades. The Drummond family (Stonier Winery) bought it in 2013 and re named the vineyard Fallen Giants after the Grampians dreamtime stories of the original owners, the Djab Wurrung and Jardiwadjali people.
