Aroma
A vibrant bouquet of ripe pear, white peach, and
citrus blossom.
Palate
A lively palate balanced by crisp
acidity.
Vinification
Picked during the night to keep the acid levels at their
optimum, the fruit was pressed and the first juices are
selected to enhance the wine’s golden colour. The
fermentation was led between 12 to 17°C to ensure
primary fruit characters and striking acidity. Once
ferment was complete, the wine as bottled.
Vintage Notes
2023 was a year of balance and consistency for the
Pays d’Oc. The growing season began with mild spring
temperatures, allowing the vines to awaken gradually.
Summer was a perfect warm, with well-timed rainfall,
mainting healthy vine growth. Unlike some recent
years, the weather was stable, providing ideal
conditions for a longer growing period. While yields
were slightly below average, the quality of the grapes
was exceptional. The 2023 vintage is being celebrated
for producing white wines with excellent freshness,
vibrant acidity, and a clean, precise character.
Region Notes
The region benefits from the Mediterranean climate.
With its coastline bordering the region in the South, it
provides hot and dry summers for a perfect maturity.
On the other side, the Black Mountain brings enough
humidity and cool temperatures for the vineyards to
produce fruit packed with delicate and elegant
aromas due to a long, cool growing season. This
exceptional climate and geographical location are a
paradise for this world-class varietal.
