The name? It refers to the last litres of wine from fermented grape skins when pressing is nearly completed. The result is one striking, deep-purple, dark-fruited red intended for further bottle age. Robust tannins rule the wine at this early stage. Blackstrap licorice, blackberry, cassis, bitter chocolate and cedary vanilla oak remain firm, taut and desperately in need of a steak, or something high in protein, to bring about more approachable drinkability now.
