Tasting Notes

Aroma

A punchbowl of fruit, with apples and nashi pears, ripe stone fruit and jasmine.

Appearance

Straw yellow with a bright, vibrant green hue.

Palate

Juicy, with classic minerality and texture. The theme of stone fruits and citrus continues on the palate before a lovely persistent finish.

Vinification

Fiano was harvested from a single vineyard in Auburn in the cool of night then gently pressed leaving two core juice components. The free run received a pure, low turbidity ferment in stainless steel to deliver perfumed and vibrant notes. The pressings were barrel fermented and remained on lees in oak for seven months to add complexity as well as texture and finesse. Partial malolactic fermentation offers further palate weight and structure. Ahead of bottling, the various components were subject to a final blending exercise to achieve the ultimate balance in the finished wine
