Tasting Notes

Maturation

15 months, in a selection of Burgundy coopered barrels, of which approximately 30% new.

Palate

This is a playful shiraz, with aromas of forest strawberries and blackberry leaf; yet underlying those notes are more mature notes of cassis and blueberry, highlighted by hints of black pepper.

Vinification

Hand-picked, de-stemmed and 50% crushed whole berry sorted to open fermentation. No whole bunches. Cold Soaked. Plunged only. Approximately 1621 days on skins. Basket pressed with light pressing included in free run, heavier pressings kept separate and not included, drained directly to barrel. Rack and returned three times during maturation.

Cellaring Potential

The tannins contribute to an elegant structure that indicates this wines ability to age gracefully into the future.

Range Notes

Hickinbotham Clarendon Vineyard covers a steep cut of country from the ridgetops above the village of Clarendon to the Onkaparinga River in the gorge below. Since its establishment in 1971, the Hickinbotham Vineyard has become a part of Australias wine heritage, supplying fruit to produce many of Australias greatest wines. Breathing new life into this historic vineyard, winemakers Chris Carpenter and Peter Fraser are forging a new era of Hickinbothams prestigious legacy: building upon and honouring the vineyards acclaimed record.

Region Notes

Shiraz sourced from predominantly 1971 contour planted blocks and approximately 10% inclusion of 2002 planted Shiraz. 170-220m altitude on the Estate.
