Tasting Notes

Aroma

The Cabernet shines aromatically with notes of blackberry pie and dark chocolate.

Maturation

Rack and returned three times during the maturation of 15 months 100% new oak, Shiraz Burgundy coopered French oak, Cabernet Bordeaux coopered French oak.

Palate

While the Shiraz fills the mid-palate with black plum and toasty oak. Fine tannins and balanced acidity contribute to an incredibly long finish. The Peake continues to honor the legacy of this iconic Australian blend.

Vinification

The two varieties were hand-picked, destemmed and fermented separately. During fermentation, the Shiraz was plunged three times daily while the Cabernet was pumped over daily. Both varieties were left on skins for a minimum of 18 days and gently basket pressed. The Cabernet matured for 15 months in fine-grained Bordeaux coopered barrels while a mixture of puncheons and barriques were used for the Shiraz. In total, 50% of the French oak was new. The finest barrels were selected and blended together shortly before bottling.

    Exuberant, showing bittersweet dark chocolate, espresso and notes of kirsch, framboise and maraschino cherry at the core, with accents of rosemary, oregano and cigar box and a wonderfully dense, plush body. This wine really takes off on the generous finish, which packs momentum and complexity. Cabernet Sauvignon and Shiraz. Drink now through 2035. Points: 95/100

    This has an open and polished nose of black cherries, blueberries, olives, mint chocolate, rosemary and nutmeg. Bright and silky with fine yet firm tannins wrapping a textured, creamy core of fresh and spiced black fruit. All interwoven. 52% cabernet sauvignon and 48% shiraz. Already drinkable, but better from 2025. Screw cap. Points: 95/100

    Sourced from the contoured quilt of estate vines, a confluence of silts, loams and ferrous outcrops. A traditional blend of the finest performing blocks and best barrels (50% new). A nose tingling with a visceral energy, such is the mineral-clad spine to this wine. Rich and powerful, to be sure, as the sweetness of shiraz and its blue-fruit aspersions meander across cabernet's bones of finely tuned tannins, dried herb and cedar-oak cladding. Yet the overall effect is one of umami warmth, savoury depth and immense potential. This is an iconic wine and deservedly so. Points: 97/100

    Black/purple. This is deep, dark, brooding and coiled. Serious underlying power with balance, force and focus. Notes of aniseed, blackberries, dark chocolate, axle grease (in a good way) and coffee beans. Great length here with soft powdery tannins. The two grapes meld together perfectly, neither dominating, but both enhancing the other. Plush and soft and cuddly, this is a cracking red. 15 years plus if needed, but good luck keeping your hands off it for that long. Love it. Points: 97/100

    Ink black at the core to a deeply-tinted ruby-red rim. A rich and complex nose, mixed berries and oak spices lift from the glass. Voluminous and weighty, the fruit concentration is impressive yet doesn't fall into the jammy spectrum. Equally, the oak complexities are unmistakeable, but everything is in remarkable harmony and balance for such a young wine. A prodigious length and it finishes with a clean vibrancy and a hint of mint freshness that belies its previous intensity Points: 95/100
