    60% Grenache 20% Syrah and 20% Cinsault. Pink lady apple sorbet, cherry blossom and white raspberries. A hint of pink peppercorn and yellow plum skin. Acidity is linear and ebbs and flows across the palate. Unlike some dry Provence rosés, AIX always manages to intensify in flavour from the time you bring it to your lips. There is strawberry shortcake followed by cantaloupe and peppery radish leaf. It is scintillating in its fruity and yet fine textural grace. A dream with seared scallops and chorizo butter. Points: 93/100
