Aroma
A lively burst of strawberry and watermelon, balanced with a hint of citrus
zest.
Palate
Fresh acidity and a delicate, refreshing texture make it the perfect sip
for sunny afternoons and relaxed bites.
Vinification
The fruit is harvested at night, when temperatures are cooler, to prevent
oxidation. Using the saignée method, the juice spends a short time in
contact with the skins before being drained off, allowing it to capture
vibrant aromas and a delicate colour. Fermentation takes place at low
temperatures to preserve the subtle fruit character, while the wine rests on
fine lees for a minimum of two months, with periodic stirring to develop a
smooth texture.
Region Notes
IGP Pays d’Oc - South of France. This region benefits from the Mediterranean
climate. With its coastline bordering the region in the South, it provides hot
and dry summers for a perfect maturity. On the other side, the Black
Mountain brings enough humidity and cool temperatures for the vineyards
to produce grapes packed with fruity aromas. It is the patchwork of wine-
growing areas that create an expression of these grape varieties that are
unique. This allows us to produce a versatile range of wines reflective of the
region.
