Tasting Notes
Aroma
Sappy spice, wild crushed herbs, rosemary with hints of blackberry. Briny black olive and liquorice add complexity
Maturation
The wine was then pressed and left to rest in older French barrels in the underground wine cellar for 10 months prior to racking and bottling.
Appearance
Dark red with a ruby hue.
Palate
Black olive and blackberry pith flavours immediately flow onto the palate. Mediterranean spices including marjoram add further complexity. Raspy tannins and fresh acidity encapsulate the wine giving length and drive. A great wine with rustic food.
Vinification
Carefully hand harvested fruit was picked in the cool of the morning to retain vibrancy. 100% Whole bunches underwent wild fermentation in small open
fermenters. Only the best selection of Mondeuse went into this with only 120 dozen made.
