Tasting Notes

Aroma

The 2019 Estate Cabernet Sauvignon starts out with fresh red and dark fruit aromas pomegranate and wild blackberry with notes of graphite and bay laurel undertones.

Maturation

18 months in 43% new French Oak.

Palate

As the wine opens in the glass, deep fruit flavors of plum skin and cranberry alongside bright cocoa dance on the palate. The mouthfeel is rich and inviting, framed with fine grain tannins, that support the fresh and vibrant finish.

Vinification

Fermentation: Hand-picked, destemmed, fermentation in French oak upright tanks. Malolactic fermentation in barrel.

As a blend of our best Cabernet Sauvignon vineyard sites, the Estate bottling is one of the most compelling illustrations of the Stonestreet Mountain. We blend this wine with discerning precision, balancing aromatic intrigue, texture and the Mayacamas’ signature structural elements into a pure reflection of the vintage.
