Tasting Notes
Aroma
Reserved aromatics of melon, pear, cinnamon, damp cedar, rosewater and nectarine.
Maturation
12 months in new and one and two year old French oak puncheons, 12 months in stainless steel.
Appearance
Brilliant, light straw.
Palate
The palate is very light on its feet, a nice entry and mouthfeel that shows very energetic and mouth-watering fruit. This has a Bickfords lime cordial edge, that stays focused and vibrant. The secret to this wine is always the sneaky acid profile; the fruits sits around but the main act is the clean, fresh, reverberating chalky and textured acid profile. This wine shows a leanness that is reminiscent of our original bottling in 2012.
Vinification
Whole bunch pressed to new and one and two year old French oak puncheons. aged for twelve months on a fine lees. Btonnage performed once every four months. Racked to off gross lees and put back to barrel. Lightly fined and filtered prior to bottling.
Cellaring Potential
This will age very well for a very long time.
Range Notes
Starting out as a trial in the cellar, Adrestia turned out to be a wine of texture and balance that fully merited the introduction of a white wine to the flagship series. Adrestia was the daughter of Ares and Aphrodite. She was a goddess of equilibrium, revolt & just retribution and often accompanied her father Ares to war as a balance between good and evil.
