Appearance
This year Ares is black on black in colour.
Palate
The palate is silky and soft. It caresses your tongue and then rolls straight to the late palate. This pull the magic act of being a big wine in a small wine's body: It creeps up on you slowly and effortlessly, Man this is a seriously fun ride! It rolls and rolls along and the tannins and never really seems to dissolve or stop; pure silk is the best way to describe it. In the end you're left searching for the acidity, fruit and tannins as they are all so welded together. Nothing sticks out in this wine, it's Barossa Shiraz at its best.
Vinification
De-stemmed, crushed and fermented in five tonne open top fermenters, with regular pump overs (up to three daily over peak fermentation) to extract colour and tannin. Following 10-20 days of skin contact maceration the free run was drained to tank with the skins then pressed. Both the free run and pressings are blended to tank and then racked to oak after 24 hours. Malolactic fermentation takes place in barrel. Minimal fining and non-filtered.
