Whole-bunch pressed, then fermentated in a combination of 950L concrete eggs (55%) and older French oak barriques (45%), with a short élevage before bottling in May. A new addition to the Welkin range, and a promising one. It’s sunny and racy all at once, with corella pear, citron, crisp golden apple, fennel and a little saltiness. Flavour packed, refreshingly crisp, faintly chewy and textured for food, this is good stuff. Points: 93/100
