Fermented in neutral French barriques, rested on lees to imbue complexity and breadth and transferred to tank for a 2nd fermentation in accordance with the Charmat method. All about a resolute urgency of now: a juicy mid palate, frothy, crunchy bead and gushing autumnal fruits. This is the schtick. Some apple, lanolin, nashi pear, quince and loads of immediate fun.
