Tasting Notes

Aroma

Aromatics of red apple and lemon curd.

Appearance

Pale straw colour in the glass.

Palate

A palate that is fresh and vibrant. A fine and consistent bead provides a great mouthfeel and length of palate.

Vinification

The fruit was pressed and transferred to neutral French oak barriques to ferment. Once ferment was complete the wine rested on its lees for five months to impart texture and additional flavour elements. The wine was transferred to tank for secondary ferment (Charmat) and was bottled in August 2021.

Cellaring Potential

Ready to drink now, but will cellar well over the next 3-5 years.

Food Matching

Fresh oysters are a perfect match - the crispness and light body of the wine cut through the richness of the oyster perfectly.

All about a resolute urgency of now: a juicy mid palate, frothy, crunchy bead and gushing autumnal fruits. This is the schtick. Some apple, lanolin, nashi pear, quince and loads of immediate fun. Points: 90/100

    Scents of cheesecake, cucumber, fennel and lemon mineral water. Lightly fizzy, cloying in texture around that sparkle, cucumber, lemon mineral water, some saline minerally stuff to finish. Simple, clean, oily fizz of easy pleasure. Feels like a great alternative to prosecco or similar. Points: 90/100
