Vinification
Alcoholic fermentation and ageing (1 year and a half) in stainless
steel vats.
Each year, the harvest – done by hand - require an experienced team of 40 pickers. Grape picker empty their buckets into 15 kg
cases, grapes are then transported in small quantities and are quickly conveyed to the winery, where an arsenal of stainless steel
equipment is ready for the last grape sorting operations. Each clos and each nature of terroir are vinified separately.

The great classic of Chinon with rillettes, rillons, poultry or fresh goat's cheese.
Region Notes
This cuvée is the result of a blend of different plots of land located on the left bank of the Vienne river, all with the same soil profile.
The cuvée Les Petites Roches, with its predominantly clayey and moderately chalky slopes and plateaus, offers wines with red fruit aromas and a nice mineral structure, to be enjoyed within five years of the vintage.
