Since the beginning, Clover Hill has been one of the few Tasmanian sparkling houses creating sparkling wine exclusively using méthode traditionnelle. Now, they’re focused on a multi-vintage philosophy that delivers a consistent house style based on fresheness, character and vibrancy.
Their multi-vintage approach sees select reserve wines aged in various vessels-in barriques, large format oak Foudre, and under pressure in bottle and tank. These reserve wines are then blended with a chardonnay-dominant vintage base, before tirage and secondary fermentation in bottle-this creates a more consistent, vibrant house style.
