For the last 40 years Clover HIll has been redefining Tasmanian sparkling wine. Since the beginning, Clover Hill has been one of the few Tasmanian sparkling houses creating sparkling wine exclusively using méthode traditionnelle. Now, they’re focused on a multi-vintage philosophy that delivers a consistent house style based on fresheness, character and vibrancy. Their multi-vintage approach sees select reserve wines aged in various vessels-in barriques, large format oak Foudre, and under pressure in bottle and tank. These reserve wines are then blended with a chardonnay-dominant vintage base, before tirage and secondary fermentation in bottle-this creates a more consistent, vibrant house style.
