Palate

On the palate the wine has a rich and creamy texture derived from a minimum of 60 months on lees, with delicate but persistence crisp acid backbone that drives the wine to produce a seamless finish.

Medium straw-yellow hue. White peach, brioche and yeast extract aromas. Palate has wonderful complexity and integration. Peach, apple, and lemon curd are seamlessly melded with sweet puff pastry, oyster brine and nougat complexities to build character. An ultra fine and stylish mousse interplays with bright acidity in harmony and balance, ensuring no edges are seen as it runs very long to a finish that is both crisp and savoury. Points: 95/100

Multi-vintage, 100% chardonnay, 60 months on lees. Light straw with an ultrafine, energetic bead and mousse. Baked apple and citrus fruit with hints of sea spray, shortbread, shiitake broth, freshly baked pastries, crushed stone, pressed white flowers, clotted cream and ozone. Rich and mouth-filling on the palate with a swell of spiced apple and fresh brioche stretched on a frame of vivid, minerally acidity. Trails off long, pure, dry and creamy. Points: 96/100
