Founded by Paris Sigalas on the ancient plain of Oia, Santorini in 1991, Domaine Sigalas is now owned and led by Kir-Yianni. Planted primarily to Assyrtiko, one of the most vibrant, minerally and age-worthy Mediterranean white varieties. Part of the Cyclades Complex in the south Agean Sea, the climate is Mediterranean, mild winters and hot summers cooled by the sea mist. The harsh summer winds have over centuries given rise to a unique training system: 4 to five ‘amolites’ (one year old canes), interwoven into a wreath of old and new vines, retain moisture and provide protection from the wind.
