Maturation
17 months on fine lees, Older French oak,
mix of 600L, 500L, 300L.
Palate
There is a point at which the
components fill the corners of the palate & seem to
stop fighting each other – the calmness comes to the
palate. For the mild 2023 wine we see a typical
abundance of spicy Shiraz fruit, softened by the
aromatic & juicy Grenache, firmed up with Cabernet
and Mataro.
Vinification
2-5t open top, indigenous yeast, 2 week ferment,
pumpover twice daily.
