Tasting Notes

Aroma

Aromas of creanberries, strawberries, and fresh thyme.

Appearance

Bright ruby red in colour.

Palate

A fine tannin structure results from the gentle skin extraction of whole berries, the palate is precise and long with flavours of maraschino cherries and pomegranate. There’s also a pleasing vermouth-like bitterness from the stalk component which is very refreshing.

Vinification

Most of the fruit for In Dreams is destemmed with only a small proportion (5%) going into the fermenter as whole bunches. The mainly whole berries are fermented in open top fermenters for an average of 12 days. Pressed off to French oak (15% new) for maturation. Assembled and bottled in December 2024.

Vintage Notes

Mild winter led to earlier than usual bud burst which resulted in an early vintage. The season was cool and wet again (just like 20, 21 & 23). The largest deluge of rain came in January (180mm) which presented a massive challenge for the vineyard team. Lots of hard work delivered the winery team a beautifully clean and ripe crop.

Region Notes

A selection of vineyards spanning the Yarra Valley but focusing on the township of Seville East in the Upper Yarra Valley. Other vineyard sources are located in Healesville and St. Andrews. Altitudes vary from 130m above sea level to 240m and soil types include both red volcanic loams and grey clay loams overlying mudstone.

    What is mostly whole berries with a small proportion of whole bunch 5% goes into open top fermenters for 12 days. Matured in 15% new French oak. This vintage is revealing some glossy red cherries, lingonberries and some goji fruit. Some brown spices of nutmeg and cocoa powder. What feels to be a core of red fruit is nicely complemented by warm red earth and autumnal cooking spice. This is well integrated with a slew of fresh acidity and most very sultry and fine tannins that slip down the side of the palate. As equally pretty as the previous vintage but in shades and hues of ruby watercolour tones. This is drinking beautifully now. Perhaps with savoury notes of corn beef and white sauce. Points: 92/100

    5% whole bunches and 15% new oak. A light, bright garnet. A pretty bouquet redolent of redcurrant, alpine strawberry and spice rack spices. It's a touch closed at present on the compact and nicely persistent palate. Will be even better once it fills out over the next six to 12 months or so. Points: 93/100

    Very light, garnet colour, bright though. Has a little creaminess to texture, vanilla and cherry, some cranberry drink notes, a lick of raspberry liquorice and a pinch of salted herbs. Fresh feeling, pretty and rosy, cheery as a lighter weight red and generally just easy to chug down. It isn’t fancy, but it is a very well made, approachable pinot. Points: 90/100

    So vibrant and pure, with aromas of rhubarb, hibiscus, herbes de Provence, strawberry coulis and citrus peel. The palate is light-bodied and vibrant, with finely grained tannins, bright acidity and wild raspberry flavors. Delicate, crunchy and pure. Drink now. Points: 93/100
