Maturation
The wine was then matured
in 40% new French oak Puncheons and 60% 1-2-year-old
French oak Puncheons for a total of 15 months.
Palate
Mountadam Vineyards Eden Valley range is an expression of the
purity of cool climate varietals from Estate plantings. The cool
High Eden site brings lovely expression to Shiraz with mulberry,
deep vivacious spiced plums, juicy boysenberry with classic Eden
Valley white pepper spice. Plush velvet with subtle dark
chocolate tannins.
Vinification
Harvested from Block 41 on the 10th of April on the Estates
eastern side. The fruit was harvested in the cool of the night
using a selective destemming harvester and cold soaked for 3 days
prior to inoculation with 14 days total on skins. Pumped over
twice a day throughout fermentation in 5 tonne open fermenters
and fermented through to dryness.
