Maturation
All parcels
were matured in 1 year old and seasoned French oak barriques.
Palate
This Cabernet showcases
classic Eden Valley characters of cassis and rich black cherry with
subtle savoury spice.
Vinification
The fruit was harvested in the cool of the night using a selective
destemming harvester from block 38 on the Estates Eastern vineyard
at an average of 13.8 ºBe on 22nd April. The fruit was then
fermented in 5 tonne and 10 tonne open fermenters.
Region Notes
The Mountadam Vineyards Five Fifty range is aptly named after the
Estates altitude of 550m above sea level. All Mountadam wines
(including the Five Fifty range) are sourced entirely from our Estate
of 147 hectares under vine.
