Vinification
The fruit - as has been tradition over the last two vintages - was
sourced from Block 41 and Block 40 on the Estates Eastern vineyard
and harvested using a selective destemming harvester on the 5th and
22nd of April. The fruit was fermented in 5 Tonne and 10 Tonne
open fermenters, pumping over twice a day. The two blocks were
kept separate throughout maturation in 1 year and seasoned French
oak Barriques, Hogsheads and Puncheons.
