Palate
The palate is rich and creamy in texture, quite opulent for its youth. It’s flinty and struck match on the nose but everything is fresh and bright.
Vinification
Sourced from three of Tumbarumba's oldest vineyards; Johansen/Glenburny, Wondalma and Tooma. Grapes are handpicked and whole bunch pressed straight to 35% new French barriques and puncheons – balance to 1 to 4 year French barriques. Wild yeast fermented and left on lees to go through full malolactic fermentation. The wine is then kept on lees. Barrels are stirred and topped weekly. No finings. Filtered and bottled early February 2023.
