Palate
An intensely flavoured palate of lemon zest, lime juice and crunchy green apples. The long, and balanced palate is supported by a vibrant acidity.
Vinification
The grapes for this wine were sourced from select vineyards in the Hunter Valley. The fruit was handpicked in early January, whole bunch pressed and cold settled over 2 days. The clean juice was then racked clean and fermented at a cool temperature for 15 days with a neutral yeast to promote fruit flavours. The wine was then racked off yeast lees, and lightly fined with skim milk, before being filtered and bottled early to retain freshness.
