Tasting Notes

Aroma

Blackberry, spiced plums, lavender oil, cracked pepper and cured meat.

Appearance

Deep crimson with a black core.

Palate

Saturated to the core, Ares delivers a wall of flavour across the palate with notes of blackberry, baking spices, lavender oil, scorched earth, coal dust, and high cocoa, dark chocolate emerging at every turn. Depth and nuance in a large framework, thick and bold tannins screech across the mid-palate and pull the wine through to an incredibly long finish laced with detail, created by notes of black cracked pepper, expresso shot, and coal dust.

Vinification

Crushed, de-stemmed and fermented in five, seven and 10 tonne open top fermenters with regular pump overs; up to three times daily during peak fermentation to extract colour and tannin. Following 12-21 days of on skins maceration the free run was drained to tank with the skins then pressed. Both the free run and pressings are blended to tank and then racked to oak after 24 hours. Malolactic fermentation takes place in barrel. Minimal fining and non-filtered.

    How can you create a deep crimson-purple-coloured, luscious, deep-seated array of black fruits and full-on tannins rippling through the palate from start to finish with fruit at 14%? It's an outstanding achievement from any vintage, especially '14. Points: 96/100
