Aroma
Aromas of pure red and dark cherry, blackberry and Doris plum fruits with hints of mixed spice, sage, peppercorn, roast meats, licorice, crushed stone, violets, dark chocolate and cold tea.
Palate
There is a savoury lean on the palate, but that fruit is juicy and pure, showing itself with clarity and detail. Fine-grained tannins, too, all powdery and rocky, with some nice chew and just the right amount of structural heft.
Vinification
With Block 12 harvested on 12th April and Block 40 harvested on the 22nd of April. Both
Blocks lay on an easterly aspect with shallow rocky soils, yielding very low at under 2 tonnes
per acre. The fruit was fermented in 5 tonne open fermenters and matured in new and 1-2
year old French oak Barriques, Puncheons and one new Fouderie Francois oak cask.
