Very pale onion-skin. Tight and restrained on the nose but flavoursome and long on the taut, acid-driven palate. Hints of fresh dough, linden, oyster shell, lime leaf and crisp apple define this refined, young sparkling wine. The chalky, dry finish takes on a more earthy tone as mushroom and white pepper make an appearance. Almost austere in its steeliness: there is no rush with this wine—it will continue to broaden and develop more earthy complexity over the next year or two. Disgorged 06/25. Points: 93/100
